WHY IS THE SAUCE CALLED Meatless BOLOGNESE?

The name of our sauce is admittedly something of a misnomer! A classic Bolognese is, of course, a dense meat sauce loaded with butter, oil, cream and calories. We set out to create the rich satisfying thickness of a Bolognese using lots of nutrient-dense vegetables, walnuts, sun-dried tomatoes, assorted herbs, spices and other flavorings, but without the meat, fat, sugar, butter or cream. You can eat as much of our sauce as you like, feeling satisfied but not stuffed. It’s a revolutionary, only one of its kind Meatless Bolognese! We think we’ve invented an entirely new product.


are your sauces good OPTIONs FOR MY FAMILY?

Loaded with six different vegetables, our Meatless Bolognese is the perfect way to “sneak” healthy ingredients—cauliflower, carrots, onions, mushrooms, garlic and tomatoes—into your everyday family meals. Our Velvet Vodka sauce is dairy-free, with a rich, silky smoothness that mimics a classic vodka sauce, and only 100 calories in a half-cup serving!   Also, there is just enough vodka in our sauce to enhance its flavor. We actually tested the sauce with and without the vodka and kept it in the recipe because it made a big difference in taste! The alcohol is completely cooked off when the sauce is brought to a boil and we’ve made sure to use a gluten-free vodka.


WHY IS the meatless bolognese OIL-FREE?

We believe Americans have been seduced by sophisticated marketing campaigns into thinking that following a Mediterranean diet, which relies heavily on olive oil as a basic ingredient, leads to good health. But oils, whether made from olives, corn, or coconut, are extremely low in nutritive value. They contain no fiber, no minerals and are 100% fat calories. While we are neither doctors nor nutritionists, we know that eliminating oil in our diets drastically reduces empty calories. So we decided to create a sauce that doesn’t rely in any way on fat for flavor.


Why did we add walnuts to the meatless bolognese?

The walnuts in our sauce make it thicker and add a meat-like texture. Plus they are a good source of protein, which is not found in other pasta sauces, and very much appreciated by vegans.  


HOW DO YOU ACHIEVE A FLAVORFUL SAUCE WITHOUT SAUTEING VEGETABLES IN OIL?

To achieve the flavor of sautéed vegetables, we take time to first carefully shred the fresh cauliflower, carrots, onions, garlic and mushrooms. Then we slow roast them in a dry skillet, turning them frequently, so that they develop a flavorful caramelized richness around their edges. This long, slow roasting process, while time-consuming, is essential.


MOST TOMATO-BASED SAUCES ADD GRANULATED SUGAR TO COUNTER THE ACIDITY OF THE TOMATOES.  IS THERE GRANULATED SUGAR IN YOUR SAUCE?

There is no added granulated sugar in our Meatless Bolognese or Velvet Vodka sauces and there never will be in any Hudson Green products! We found by using a variety of high-quality ingredients, herbs, spices and other seasonings we could eliminate the sugar and reduce the need for too much added salt.

THERE ARE SO MANY BOTTLED TOMATO SAUCES ON THE MARKET.  WHY DID YOU MAKE your sauces AND HOW are they DIFFERENT FROM OTHERS?

We believe that eating well is the first step to becoming and staying healthy. We set out to create a revolutionary line of food products for our family and others, loading our sauces with fresh vegetables, and no added sugar, water, and or inexpensive filler ingredients often added to other sauces and plant-based foods.  

Our Meatless Bolognese is made in small batches with fresh cauliflower, carrots, onions, garlic, mushrooms, assorted tomatoes, 8 different herbs, spices, and seasonings, and walnuts. Walnuts and sun-dried tomatoes add a pleasant meat-like texture. There is no other sauce on the market that matches the quantity and quality of the vegetables and ingredients we use.

Our Velvet Vodka is dairy-free, with a rich, silky texture that nails the mouth-feel of a classic vodka sauce without any of the cream, cheese or butter! We dare you to try it and put it to the test!


WHY DID YOU MAKE THE meatless bolognese SO THICK?

The jarred tomato sauce aisle is over-stocked with bland and watery marinaras. We make a dense, rich, all-vegetable sauce that has more imaginative versatility than a watered-down tomato sauce. Here are just a few of the many ways to use to use our Meatless Bolognese:

  • To fill an omelet (see our recipe)

  • To stuff peppers (see our recipe)

  • As a calzone or taco sauce

  • As a finishing sauce for roasted vegetables like asparagus or grilled white fish 

  • As a base for a dynamite chili (Available in our recipe brochure when you purchase our sauce!)

  • As a sauce for spaghetti squash or zucchini pasta

Don’t the walnuts in the meatless bolognese have oil?

Yes, but nowhere near as much as if we used olive oil to sauté our vegetables. Plus, walnuts are an excellent source of protein, anti-oxidants and the B vitamin, biotin, and they add a pleasant meat-like chewiness to the sauce.
